I use AIM. I'd use the gmail one if it allowed me to talk to ichat/aim people and I knew anyone else using it. Basically my choice is dictated by the people I chat with using ichat or aim.
I keep meaning to look at other clients that do multi protocols but haven't gotten around to it.
