1) Yakisoba with pea pods
Open yakisoba package. Put noodles in colander, rinse under hot water. Throw away seasoning packet, since it contains garlic powder. Instead mix brown sugar, corn starch, soy sauce, rice vinegar, ginger powder, and some water. Open package of pre-washed pea pods. Eat a few. Put the rest in a hot skillet with peanut oil. Cook for a minute or two. Dump in the sauce mix and noodles. Cook for another minute. Take off the stove. Eat.
2) Bean burrito
Open can of refried beans. Spread some on tortilla. Add a couple drops of hot sauce and mix. Sprinkle with pre-shredded cheddar. Roll up and microwave for a little under a minute. Eat.
3) Stir-fried steak with roasted asparagus
Have husband make steak. :) Preheat oven to 450 F. Trim asparagus and spread on oiled baking pan. Brush with balsamic vinegar and sprinkle with salt and pepper. Roast 10 minutes.
4) BBQ pork
Season boneless pork shoulder with kosher salt and fresh ground pepper. Put in slow cooker. Pour grated parmesan and BBQ sauce on top (in our case, home-made apricot BBQ sauce). Cook on Low all day.
