For work chat I use iChat and usually end up using all of its protocols (AIM, because it used to automatically sign you up for an AIM account; Jabber; and apple's Rendezvous/Bonjour thing).
I mostly don't use chat for personal stuff (like cloister, I miss the old mainframe talk experience) but I occasionally use IRC, AIM, or Gale.
